Thai Drunken Meteor Noodles
" Drunken Noodles is one of the classic dishes in Thai cuisine, and its origin has two main explanations. One suggests that Drunken Noodles earned its name because it incorporates a variety of aromatic spices and herbs in the stir-fry, creating a sensation that even those who haven't consumed alcohol feel as if they were intoxicated. The other explanation attributes its creation to people enjoying it after a night of drinking, using leftover ingredients to craft a delicious and spicy noodle dish. Over time, it gained popularity and became a sought-after street food, eventually evolving into one of Thailand's renowned local delicacies."

COOKING STEPS
烹煮步驟
STEP 1.
Place the A-SHA Meteor Noodles with Braised Beef Sauce, fish sauce, maple syrup, sugar, and water in a small bowl. Stir well and set it aside.
STEP 2.
Heat a skillet with cooking oil and sesame oil. Add the onion, minced garlic, chili slices, and scallions in that order. Sauté until softened, then set aside and add the chicken to the skillet. Pan-fry until both sides are browned, then stir-fry the chicken with the set-aside ingredients.
STEP 3.
Add the broccoli stems to the skillet and stir-fry until softened, then add the baby bok choy leafy greens and stir-fry together.
STEP 4.
Pour in the prepared soulful sauce and add some scallions. Bring the sauce to a boil, then turn off the heat and set it aside.
STEP 5.
Boil water in a deep pot, add the meteor noodles (cook for about 8 minutes), then drain and transfer them to the chicken mixture. Stir until the sauce boils and thickens.
STEP 6.
Boil water in another pot, add a little white vinegar, reduce the heat, create a vortex using a spoon, and gently drop the poached egg in (cook for about 1 minute and 30 seconds). Remove the poached egg and place it on top of the plated noodles. Garnish with cilantro, and you're all set!
